We are seeking a dynamic, hands-on Chef de Cuisine to lead and inspire the kitchen teams at both Hockley Valley Resort and Adamo Estate Winery. The successful candidate will oversee all culinary operations for a la carte outlets, from designing menus to executing events, while ensuring the highest standards of service, quality, and profitability. This role requires a creative and passionate individual with strong leadership skills and at least 3 years of leadership experience in a similar role with Italian / Mediterranean cuisine skills & managing kitchen staff in a high-pressure environment.
*Purpose:*
To construct, implement, maintain, and improve methods of operation inclusive of personnel management, service, and quality standards, ensuring maximum profitability within the food service operations of both Hockley Valley Resort and Adamo Estate Winery.
*Key Responsibilities:*
* *Menu Design & Execution:*
* Plan, cost and design a la carte menus for both Hockley Valley Resort?s outlets (Cabin, Babbo, R85 corporate and seasonal offerings such as Snowglobes and Food & Fire globes) and Adamo Estate Winery A la carte.
* Continually develop creative and innovative menu items that meet customer needs and reflect current culinary trends.
* Execute & oversee daily a la carte service and special events, including weddings, corporate events, and social gatherings.
* *Leadership & Personnel Management:*
* Hire, train, and supervise kitchen staff, including, Sous Chefs, Chef de Parties, Cooks, Apprentices, Kitchen Help, and Stewarding Staff.
* Provide direction, leadership, and support, ensuring alignment with company objectives and standards.
* Ensure a safe and healthy working environment, enforcing rules and standards related to equipment, conduct, and dress.
* *Operational Efficiency & Control:*
* Standardize recipes and control food costs while managing kitchen expenditures relative to food revenue as outlined by management.
* Implement and maintain control procedures regarding inventory, purchasing, and kitchen equipment.
* Manage labor costs and ensure appropriate scheduling and placement of qualified kitchen personnel to maximize efficiency and profitability.
* *Administrative & Reporting Duties:*
* Assist in budget setting and implement control systems to maximize bottom-line profits.
* Submit timely and accurate payroll and administrative reports.
* Ensure consistent communication with the Executive Chef, Executive Sous Chef and other team members, participating in food and beverage meetings, function meetings, and monthly financial reviews with the chef.
* *Additional Responsibilities:*
* Participate in special projects and committees to support overall company goals.
* Report concerns or issues to the Executive Chef as required.
* Fulfill any other duties as directed by the Executive Chef.

* *Functional Relationships:* Maintains a collaborative working relationship with all team members.
*Requirements:*
* Qualification from culinary school preferred
* Red seal or any other equivalent skills certification is an added asset
* Minimum of 3 years of experience managing & leading kitchen operations in a high-pressure environment in a similar role
* Strong leadership skills with the ability to motivate and manage a team effectively.
* Proven experience in Italian / Mediterranean menu design, food costing, controlling labor and overhead costs.
* Exceptional creativity, passion for food, and commitment to delivering high-quality service.
* Excellent written & verbal communication, organizational, and problem-solving skills
* Complete hands on Chef that is required to work on line
* Creative innovative thinking and keeping up with trends
* Able to source and work with local farmers to keep farm to table concept
* Exceptional standards for cleanliness, health and safety
