We are a premier steakhouse located in the heart of Centretown Ottawa, known for our exceptional dining experience, high-quality ingredients, and dedication to culinary excellence. We are currently seeking an experienced and passionate *Chef de Cuisine* to lead our kitchen team and uphold the highest standards of food quality and execution.
*Position Overview*:
As the Chef de Cuisine, you will be responsible for overseeing all aspects of our kitchen operations. The ideal candidate will bring creativity, strong leadership, and extensive culinary expertise, with a minimum of 5 years in a lead culinary role in a fine dining or high-end restaurant setting.
*Key Responsibilities*:
* *Leadership & Team Management*: Hire, train, and manage a high-performing culinary team that embodies our dedication to excellence.
* *Food & Labour Cost Management*: Oversee and control food and labour costs to maintain profitability without compromising quality.
* *High-Level Execution*: Ensure consistent execution of all menu items, adhering to high culinary standards while pushing for innovation.
* *Ordering & Inventory Management*: Manage inventory levels, order ingredients and supplies as necessary, and minimize waste while ensuring freshness and availability of high-quality products.
* *Maintain a Clean and Safe Environment*: Ensure that cleanliness of the kitchen and prep areas is maintained and that food saftely guidlines are consistently followed.
*Qualifications*:
* Minimum 5 years of experience in a lead culinary role, preferably in a high-end or fine dining establishment.
* Proven ability to lead, develop, and inspire a culinary team.
* Strong knowledge of food cost management, labour controls, and inventory practices.
* Expertise in sourcing and working with premium cuts of meat and other high-quality ingredients.
* Strong organizational and communication skills.
* Ability to thrive in a fast-paced, high-pressure environment while maintaining attention to detail.
*Compensation*:
* Salary range: $70,000 - $90,000 per year, depending on experience.
* Bonus structure based on performance.
